COMPOTA DE FRAMBOESAS

Ingredientes

Açúcar amarelo: 250 gr
Framboesas: 500 gr

Água: q.b.
Vinagre: q.b.


Preparação

Demolha as framboesas em água e umas gotas de vinagre durante 30 minutos. Escorre, passa por água limpa.
Reserva algumas framboesas inteiras, coloca as restantes numa panela com o açúcar e deixa ferver, mexendo sempre.
Está pronto quando tira um pouco de compota para um pires e ao passar com o dedo pelo meio, inclina o prato e a compota não escorre.
Num tacho com água a ferver ponha os frascos e as tampas, deixe ferver durante 5 minutos, retire com uma tenaz e deixe secar sobre um pano. Encha totalmente com doce e as framboesas que havia posto de lado, feche e deixe arrefecer virados ao contrário, sobre um pano.
Pode aromatizar juntando uma casa de limão pequena ou um pau de canela se quiser um resultado “mais quente”, eu como gosto do sabor forte das framboesas prefiro simples.

RAPSBERRY JAM

Ingredients

Brown sugar: 250 gr
Raspberries: 500 gr
-
Water: as much as is needed
Vinegar: as much as is needed

Preparation

Let the raspberries, for 30 minutes, in water with a few drops of vinegar. Drain, and wash with clean water. Put aside some raspberries, then place the remaining raspberries in a pan with sugar and boil, always stirring.
The jam is ready when after dropping a portion in a small plate and cross your finger through it keeps divided without joining back together.
In a pan with boiling water lay the jars and the covers, let it boil for 5 minutes, remove them with a tongs and let it dry over a cloth. Fill with jam and the raspberries previously reserved, close and let cool turned upside down, over a cloth.
You may add a lemon zest (fresher taste) or a cinnamon stick (hotter taste) to enhance the flavor, I prefer the strong taste of the raspberries, simple with the sugar.
